Ingredient Notes
- Butter - I use salted butter in nearly all of my cookie recipes (like in my Chewy Coconut Oatmeal Cookies) but you could use unsalted butter with ½ teaspoon of salt added to the recipe.
- Sugar - A combination of brown sugar and white sugar makes for great texture and flavor in most cookie recipes.
- Peanuts - This recipe was tested with salted roasted peanuts. I think they give the perfect salty, crunchy bite to the soft and fudgy cookies.

- Cocoa Powder - Dutch-processed cocoa is what I use and recommend for cookie and brownie recipes, like in my Mint Cream Cheese Brownies!

📃 Instructions
Step 1: Cream together the softened butter, white sugar, and brown sugar for 1 minute. Add the egg and vanilla.
Step 2: Cream the mixture on high until smooth and fluffy. Add the cocoa powder, flour, cornstarch, baking soda, and baking powder and mix on low speed until combined.
Step 3: Add the semisweet, white, and peanut butter chips along with the chopped peanuts.
Step 4: Fold until fully incorporated.
Step 5: Roll the cookie dough into balls and place on a baking pan that has been lined with parchment paper, leaving room between each cookie for them to spread.
Step 6: Bake in a preheated oven for 8-12 minutes or until spread out, cracking slightly, and puffy looking. Top with additional chocolate chips and peanuts for a pretty garnish.
💡 Top Tip
If you like your cookies on the softer, more gooey side, bake for around 7-10 minutes. If you prefer more "well-done" cookies, aim for a 10-13 minute range. Of course, every oven bakes differently, so be sure to check them until your desired doneness is reached.

Peanut Butter Chocolate Cookies

Ingredients
- ¾ cup salted butter * softened
- ¾ cup white sugar
- ½ cup brown sugar packed
- 1 whole egg
- 1 teaspoon vanilla extract
- ½ cup cocoa powder (I use Dutch-processed cocoa)
- 1 ¼ cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ cup semisweet chocolate chips
- ½ cup white chocolate chips
- ½ cup peanut butter chips
- ½ cup salted roasted peanuts
Instructions
- Preheat the oven to 350℉. Line baking sheet(s) with parchment paper or silicone baking mats or spray with nonstick spray.
- Cream together the butter, white sugar, and brown sugar with an electric handheld mixer at high speed for 30 seconds. Add the egg and vanilla and continue mixing until light and fluffy. Add the cocoa, flour, cornstarch, baking soda, and baking powder and mix at low speed until just combined. Fold in the chocolate chips and peanuts.
- Scoop using a medium-sized cookie scoop or teaspoon onto the prepared baking sheets, 12 cookies per pan. Bake cookies one pan at a time in the preheated oven for 8-10 minutes or until just slightly soft looking on top. Let cool on the pan for a few minutes before transferring to a wire rack to finish cooling while you bake the remaining pans of cookies. Enjoy!
