This cake is perfect for snacking, just sayin'!  Or a quick and easy to make dessert to bring to a potluck!

This cake is in fact, a perfectly acceptable snack food.  You would eat a banana with peanut butter and call it a snack, so why couldn't banana cake with peanut butter frosting be considered a snack, too?  Ah, the mysteries of life... #nerd

Anyway, next time you need a banana cake recipe, use this one!  You can, of course, frost this with chocolate ganache or cream cheese frosting or this yummy caramel frosting, or whatever suits your fancy instead of peanut butter frosting.

Banana Cake with Peanut Butter Frosting

Soft and moist banana cake made with butter and brown sugar (yum!) and frosted with a creamy, dreamy peanut butter frosting!

Ingredients

For the Cake:

  • ½ cup softened butter
  • 1 ½ cups brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 3 very ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ cup milk

For the Frosting:

  • ⅓ cup softened butter
  • ½ cup creamy peanut butter
  • 1 ½ cups powdered sugar (confectioners sugar)
  • 2-4 tablespoons milk

Instructions

For the Cake:

  • Preheat the oven to 350℉ and grease a 9X13-inch glass baking dish with non-stick cooking spray. 
  • In a large bowl using a handheld electric mixer, cream together the butter and sugar, add the vanilla, eggs, and mashed bananas and beat in medium speed until all is combined.  
  • Whisk together the flour, baking powder, and baking soda in a medium-size bowl.  Add this mixture to the wet ingredients and mix on low speed until just combined.  Lastly, add the milk and beat just until incorporated. 
  • Bake the cake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.  Remove from oven a let cool completely before frosting.  Enjoy!

For the Frosting:

  • I a medium bowl, beat together the butter and peanut butter using a handheld electric mixer on medium speed.  Gradually add the icing sugar and mix on low speed to combine.  Lastly, add the milk and beat until smooth and creamy.  Spread the icing over top of the completely cooled cake in an even layer.

    Wow, this is delicious! I made 1 1/2x the frosting recipe because I like PB so much, and we all loved it! The cake is moist and not too sweet - a great balance to the frosting.

    Wow! I love your blog recipes - they are awesome! It’s a shame that I am gluten free as I would really like to try all of these delicious foods! All of your recipes are full of flavours that I love! Especially the pumpkin spice ones!
