Ingredient Notes
- Butter - This recipe start with melted butter as do all good brownie recipes! See the recipe notes for instructions on using unsalted butter instead of salted.
- Sugar - Granulated white sugar is pretty standard for a classic brownie.
- Instant Vanilla Pudding Mix - Just a few tablespoons of instant pudding helps to stabilize the whipped cream for the topping and also adds a light vanilla flavor.
- Oreo Cookies - Chop the whole cookies (filling included) into small pieces to fold into the rich and fluffy cream. You may take out the filling if you want these brownies a little less sweet (though I don't think they are overly sweet to begin with).

📃 Instructions
Step 1: Whisk together the melted butter and sugar. Add the eggs and vanilla and continue whisking until smooth.
Step 2: Add the flour, cocoa powder, and baking powder.
Step 3: Whisk until fully incorporated and smooth.
Step 4: Spread the brownie batter into a parchment-lined pan. Bake in a preheated oven for 25-30 minutes or until no longer jiggly in the center. Let cool fully before making the cream layer.
Step 5: Whip together the heavy cream and instant vanilla pudding powder until fluffy and smooth.
Step 6: Fold in the chopped Oreo cookies.
Step 7: Once cooled, lift the brownie out of the pan using the edges of the parchment paper. Plop the Oreo cream onto the fully-cooled brownie layer.
Step 8: Gently spread the Oreo cream on top of the brownie. Top with additional chopped Oreo cookies, if desired.
Refrigerate the brownies until ready to slice and serve.

Ingredients
For the Brownies:
- ½ cup salted butter * melted
- 1 cup granulated white sugar
- 2 eggs
- ½ teaspoon vanilla extract
- ½ cup all-purpose flour
- ¼ cup cocoa powder
For the Icing:
- 1 cup heavy whipping cream
- 2 tablespoons instant vanilla pudding mix
- 6 Oreo cookies * chopped
Instructions
- Preheat the oven to 350℉. Line a 9x9-inch baking pan with parchment paper.
- In a mixing bowl, whisk together the melted butter and sugar until combined. Add the vanilla extract and eggs and whisk well. Lastly, add the cocoa powder and flour and whisk until smooth.½ cup salted butter, 1 cup granulated white sugar, 2 eggs, ½ teaspoon vanilla extract, ½ cup all-purpose flour, ¼ cup cocoa powder
- Pour into the prepared baking pan. Bake in the preheated oven for 25-32 minutes or until no longer jiggly in the center. Let cool completely before topping with the topping layer.
- Using an electric mixer, whip together the heavy cream and instant vanilla pudding powder until fluffy and smooth. Fold in the chopped Oreo cookies. Spread evenly over the completely cooled brownies. Enjoy!1 cup heavy whipping cream, 2 tablespoons instant vanilla pudding mix, 6 Oreo cookies
Notes
- Or use unsalted butter with ¼ teaspoon of salt added to the recipe.
