Ingredient Notes
- Butter - I believe butter makes everything better, including muffins! This recipe calls for salted butter but you could easily use unsalted butter with extra salt added to the recipe, see the recipe notes for how much!
- Bananas - Make sure your bananas are super ripe, like the ones pictured here! Riper bananas equal the best flavor, better texture, and more sweetness, like in my Chocolate Chip Banana Bread!
- Butterscotch Chips - You could use cinnamon chips (if you can buy them where you live) or caramel chips instead.
- Pecans - Could be replaced with walnuts or other kinds of nuts instead or omitted entirely for a nut-free muffin.

📃 Instructions
Step 1: Cream together the softened butter and brown sugar until fluffy. Add the eggs, vanilla, and mashed banana and continue creaming until incorporated. The mixture might be a little seedy-looking, but that is okay!
Step 2: In a separate bowl, whisk together the flour, baking soda, and salt.
Step 3: Add the dry ingredients into the combined wet ingredients and mix at low speed just until incorporated. Do not overmix!
Step 4: Fold in the butterscotch chips and chopped pecans.
Step 5: Fill each muffin liner ¾ full with batter and top with a sprinkle of chopped pecans.
Step 6: Bake in a preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Top with additional butterscotch chips after the muffins come out of the oven, if desired.

Butterscotch Banana Muffins

Ingredients
- ½ cup salted butter * softened
- ¾ cup brown sugar packed
- 2 eggs
- 1 tsp vanilla extract
- 1 ¼ cups mashed ripe banana
- 1 ½ cups flour
- 1 tsp baking soda
- ¼ teaspoon salt
- ¾ cup butterscotch chips
- ½ cup chopped pecans
Instructions
- Preheat the oven to 350°F. In a large bowl, cream together the softened butter and brown sugar with an electric handheld mixer. Add the eggs, vanilla extract, and mashed banana and beat until creamy.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add to the combined wet ingredients and mix at low speed just until combined. Fold in the butterscotch chips and chopped pecans.
- Spoon batter into muffin tins lined with parchment liners ¾ full. Top with additional pecans, if desired. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Top with additional butterscotch chips right after baking.
Notes
- Add an additional ¼ teaspoon of salt to the recipe if using unsalted butter.
