- Butterscotch Chips - You could use semisweet, milk, white, or dark chocolate chips instead.

Step 1: Dissolve the instant coffee granules in 2 teaspoons of hot water.
Step 2: Mix together the melted butter, brown sugar, egg, vanilla, and instant coffee dissolved in water.
Step 3: Add the flour and mix until combined.
Step 4: Stir in the butterscotch chips.
Step 5: Pour into a baking pan that has been lined with parchment paper or greased.
Step 6: Bake in a preheated oven for 20-22 minutes or until set and golden around the edges.

Coffee Butterscotch Blondies

Ingredients
- ½ cup salted butter * melted
- 1 cup brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons instant coffee (dissolved in 2 teaspoons of hot water)
- 1 cup all-purpose flour
- ½ cup butterscotch chips *
Instructions
- Preheat the oven to 350ºF. Grease a 9X9-inch pan with non-stick spray.
- Whisk together the melted butter and brown sugar in a medium-sized bowl. Add the egg, vanilla, and instant coffee dissolved in water and whisk briskly until smooth.
- Add the flour and beat the mixture using a spatula or wooden spoon until smooth and creamy. Mix in the butterscotch chips and pour into the prepared baking pan.
- Bake in the preheated oven for 18-20 minutes or until slightly golden around the edges. Once cooled, cut into 16 pieces. Enjoy!
