Oatmeal cookies are definitely a favourite of many. Some prefer oatmeal chocolate chip cookies and despise raisins in cookies. I think raisin oatmeal cookies are good, however, it can be shocking and even a little disappointing to bite into an oatmeal cookie expecting chocolate chips only to be met with raisins! But this recipe is for raisins in a chewy, spicy, amazing oatmeal cookie - so be prepared!
As for other oatmeal cookie recipes, my Butterscotch Oatmeal Cookies are delightful, as are these Chewy Coconut Oatmeal Cookies. A little different than your average cookies, but always crowd-pleasers!

Here are the ingredients needed to make these spicy oatmeal raisin cookies. I have listed some substitutions and variations later in the post.
- Salted Butter - I like to use salted butter in all my baking. (Substitution notes below for using unsalted butter.)
- White Sugar - A mixture of white and brown sugar achieves the best flavour and texture in cookies.
- Brown Sugar - The molasses in brown sugar makes the cookies chewy and soft.
- Egg
- Honey - Makes the cookies extra chewy.
- Vanilla Extract - Brings in a delicious flavour dimension.
- Rolled Oats - Also called "large-flake oats".
- Quick Oats - Sometimes called "quick-cooking oats" or even "instant oats" (not the instant oats cereal with sweetener and flavouring).
- All-Purpose Flour - They are oatmeal cookies but they still have some flour.
- Baking Powder - Leavening agent actually helps cookies rise and spread out while baking.
- Salt - Adding salt helps flavours shine in baked goods.
- Cinnamon - A spice staple.
- Ginger - One of my favourite spices and flavours.
- Chipotle Pepper - This is where the spice comes from with a little smokiness too!
- Cloves - Another complementary spice.
- Raisins - The star of the show, of course! I like to use dark seedless raisins but you can use your favourite kind!

📃 Instructions
Step 1: Combine the butter, white sugar, and brown sugar. Cream together at high speed.
Step 2: Add the egg, honey, and vanilla extract.
Step 3: Whisk together the rolled oats, quick oats, flour, baking powder, salt, cinnamon, ginger, chipotle pepper, and cloves.
Step 4: Add the raisins and stir to combine.
Step 5: Add the dry ingredients to the bowl with the wet ingredients.
Step 6: Mix on low speed just until combined.
Step 7: Scoop onto a baking sheet lined with parchment paper.
Step 8: I like to place 8 cookies on each baking sheet to allow space to spread.
Step 9: Bake for 8-11 minutes or until perfectly golden around the edges.
💡 Substitutions and Variations
- Salted Butter - You can use unsalted butter instead of salted. Simply add an additional ¼ teaspoon of salt to the recipe.
- Brown Sugar - You can make homemade brown sugar by mixing white sugar with some molasses.
- Honey - If you don't have honey, corn syrup can be used instead due to its similar viscosity.
- Oats - In a pinch, you could use all rolled oats or all quick oats to make this recipe. However, I have found the best texture is achieved with a mixture of both.
- Chipotle Pepper - You may substitute the ¼ teaspoon of chipotle pepper in this recipe with ⅛ teaspoon of smoked paprika and ⅛ teaspoon of cayenne pepper. Or omit it completely if you don't like spicy things.
- Raisins - They won't be oatmeal raisin cookies anymore, but you can substitute the raisins with currant, craisins, or chocolate chips, if desired!

- ½ cup salted butter, softened *
- ½ cup granulated white sugar
- ½ cup light brown sugar
- 1 whole egg
- 1 tablespoon liquid honey **
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- ½ cup quick-cooking oats
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground chipotle pepper ***
- ¼ teaspoon ground cloves
- ½ cup raisins
Instructions
- Preheat the oven to 350℉. Line baking sheet(s) with parchment paper or silicone baking mats.
- Cream together the butter, white sugar, and brown sugar with an electric handheld mixer at high speed for 30 seconds. Add the egg, honey, and vanilla and continue mixing until light and fluffy.
- In another bowl, whisk together the oats, flour, baking powder, salt, and spices. Stir in the raisins. Add to butter mixture and mix on low speed just until fully incorporated.
- Scoop the cookie dough onto the prepared baking sheet(s) using a medium-sized cookie dough scoop or teaspoon, leaving about 2 inches between each cookie for spreading room. Bake the cookies, one pan at a time, in the preheated oven for 8-12 minutes or until no longer wet on top and golden around the edges. Let cool on the pan for 5 minutes before transferring to a wire rack to finish cooling. Bake the remaining cookies. Enjoy!
