These Easy Chocolate Chip Cookie Bars are unbelievably soft and chewy, filled with melty chocolate chips, quick and simple to make, and can be made in one bowl!
Preheat the oven to 350℉. Grease a 9X9-inch baking pan with non-stick cooking spray or butter or line with parchment paper.
In a large bowl, combine the melted butter, sugar, brown sugar, egg, and vanilla. Stir until fully incorporated. Add the flour, baking powder, and salt and stir just until no streaks of flour remain. Fold in the chocolate chips.
Spread the batter into the prepared baking pan, spreading it well into the corners of the pan and smoothing the top. Bake in the preheated oven for 15-20 minutes or until slightly golden. Let cool slightly before serving. Enjoy!
Notes
Add ¼ teaspoon of additional salt if using unsalted butter.
Add 1 teaspoon of molasses and use all white sugar if you don't have brown sugar on hand.
Or any kind of chocolate; dark, milk, white, or even something different like butterscotch or peanut butter chips in this recipe.
Store cooled bars in an airtight container at room temperature for up to 4 days
