- Oreo Cookie Crumbs - We use the entire cookie (including the filling) crushed up in the crust for these cheesecakes. You could use gluten-free Oreo cookies to make this recipe gluten-free! Or use graham crackers crushed up.
- Cream Cheese - Be sure to allow the cream cheese to soften before incorporating it into the recipe for the best smooth texture.
- Vanilla Pudding Mix - Just a few tablespoons of instant vanilla pudding mix act as a stabilizer to help give the cheesecake a thicker texture and adds flavor.
- Lime Zest - Brings a burst of fresh brightness that goes super well with the fresh strawberries in these cheesecakes!
- Strawberries - Fresh strawberries are all I have ever used and only recommend for this recipe for the best flavor and texture.

Step 1: Stir together the crushed Oreo cookies and melted butter.
Step 2: Distribute evenly between all 12 jars, packed the crust lightly into the bottom of each jar.
Step 3: Begin creaming the softened cream cheese, powdered sugar, vanilla pudding mix, lime zest, lime juice, and vanilla together until smooth.
Step 4: Add the whipping cream and mix on low until combined before increasing to high and beating on high speed for 1-2 minutes or until fluffy.
Step 5: Fold in the chopped strawberries just until incorporated.
Step 6: Distribute the batter evenly between all 12 jars on top of the crust. Smooth out the top well and cover with plastic wrap or the jar lids.
Chill the assembled cheesecakes in the refrigerator for at least 2 hours before serving with whipped cream, additional strawberries, and lime zest for a garnish.
💡 Top Tip
I have made these cheesecakes gluten-free several times before by simply using gluten-free Oreos in place of regular Oreos! Or you could even make the crust with crushed-up graham crackers.

Yes! Use gluten-free Oreo cookies crushed up to make the crust for a gluten-free option.
You could probably omit the vanilla pudding mix in a pinch. The cheesecakes might set up a little less firm but they are contained in jars so it probably won't be a big deal if they are a little more runny.
I have not tested it with frozen strawberries but probably would not recommend it. Frozen strawberries are quite mushy after thawing and their flavor isn't as optimal as fresh strawberries so they probably would not taste very great in this application. But let me know if you try it!
These cheesecakes need to be refrigerated for storage. Cover and store in the refrigerator for up to 3 days. The standard storage time for cheesecake is 4 days, but after 3 days the strawberries will be quite mushy.

Strawberry Cheesecakes in a Jar

- 12 (125ml) jars

Ingredients
- 2 tablespoons salted butter melted
- 1 cup crushed Oreo cookies * (about 10 cookies with the filling)
- 8 ounces cream cheese softened to room temperature
- ½ cup powdered sugar (confectioners sugar)
- 2 tablespoons instant vanilla pudding mix
- 1 tablespoon lime juice
- 1 teaspoon lime zest (zest of 1 lime)
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 ½ cups fresh strawberries chopped
Instructions
- Mix together melted butter and crushed cookies. Distribute evenly between 12 (125ml) glass jars. Pack lightly into the bottom of the jars and refrigerate while making the filling.
- To a large bowl, add cream cheese, powdered sugar, instant vanilla pudding mix, lime juice, lime zest, and vanilla extract. Beat with an electric hand mixer until creamy.
- Add whipping cream and continue beating until fluffy peaks form. Fold in the strawberries. Spoon evenly into the jars on top of the crust. Smooth the top using a teaspoon.
- Refrigerate for at least 2-3 hours or until ready to serve. Top with some whipped cream, a slice of strawberry, and lime zest.
