These simple and authentic tasting Copycat Starbucks Oat Bars are buttery, chewy, and so satisfying plus they do not require any baking!
Looking for an authentic recipe for Starbucks oat bars? This is just the one! They taste shockingly similar to the real deal. With only 6 simple ingredients, they are also so quick and easy to make! Sometimes I like to add a drizzle of melted chocolate to elevate them just a little.

⭐️ Why You Need to Make This Recipe
- Buttery. With ½ cup of butter, they ought to be buttery!
- Chewy. The corn syrup and brown sugar cooked with the butter create a gooey syrup that the oats are coated in for an irresistible soft and chewy texture.
- Great Copycat. These oat bars taste very, very similar to the oat bars from Starbucks if made as the recipe is written.
🧈 Ingredients
Here are the ingredients needed to make these chewy oatmeal bars.
- Butter - I use salted butter but unsalted would work fine too in this recipe. Add ¼ teaspoon of additional salt if using unsalted.
- Corn Syrup - For the most authentic Starbucks copycat flavor, corn syrup is the best to use in this recipe but you can use honey instead if you don't mind the honey flavor. I do not recommend using maple syrup as it has a much thinner consistency that I don't think would work well for the structure of this recipe.
- Brown Sugar - Just a little bit of brown sugar is added to achieve the perfect flavor! This is the same reason I add brown sugar to my Pecan Maple Vanilla Granola.
- Vanilla - A gentle hint of vanilla flavors these simple bars beautifully.
- Salt - For that perfect salty/sweet balance.
- Oats - We will use quick out in this recipe for their fine texture. You could pulse rolled oats in a food processor a few times until they reach a similar texture if you do not have quick oats.

📃 Instructions
Step 1: Combine the butter, corn syrup, brown sugar, vanilla, and salt in a saucepan.
Step 2: Bring to a boil over medium heat while stirring often. Boil for 1 minute.
Step 3: Pour immediately over the quick oats in a heat-safe bowl.
Step 4: Stir until the oats are fully coated with the syrup mixture.
Step 5: Press the mixture into a 9X9-inch pan lined with wax paper.
Chill in the refrigerator for at least 1 hour before lifting the bars out of the pan and slicing into 16 squares.
💡 Top Tip
These bars would be delicious with chocolate chips added to make oatmeal chocolate chip bars. Or simply melt some chocolate and drizzle it over the finished bars.
❓ Recipe FAQs
Rolled oats have a larger texture so they might make the bars a little crumbly. I recommend pulsing the rolled oats in a food processor a few times to make them finer in texture.
You can replace the corn syrup with honey if you don't mind a honey flavor in the bars. Golden cane syrup could also be used in place of corn syrup.
I have not tested these bars with coconut oil but I would think that it would alter the flavor of the bars and also possibly the texture. But let me know if you try it!
These oat bars should stay fresh if stored in an airtight container in the refrigerator for up to 5 days.
If you use gluten-free oats these oat bars will be gluten-free.

Copycat Starbucks Oat Bars
Equipment
- 9x9-inch baking pan
- parchment paper

Ingredients
- ½ cup salted butter *
- ½ cup golden corn syrup *
- 2 tablespoons brown sugar
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 3 cups quick oats *
- optional: melted chocolate to drizzle on top
Instructions
- Line a 9x9-inch baking pan with wax paper, leaving the edges hanging over the sides of the pan.
- Add the butter, corn syrup, brown sugar, vanilla, and salt to a heavy saucepan over medium heat and bring to a boil while stirring constantly. Boil for 1 minute before removing from the heat. Pour into a bowl with the oats and mix until fully coated. Pour into the prepared pan and smooth out the top. Refrigerate for at least 1 hour to firm up. Slice into bars. Top with a drizzle of melted chocolate if desired. Enjoy!
