Welcome to my new go-to breakfast --- Chocolate Lover's Granola.

It seems as though I can never have any kind of variety in what I eat for breakfast.
Sometimes it's smoothies, or it's eggs every day, or this chocolate lover's granola. Like for weeks on end.
Yogurt with summer fruit and a whole pile of granola is what I've been eating for the past 2 weeks.

Pretty crazy but also pretty amazing.
Because this granola is totally the best part of waking up!
You'll be eating this every morning for breakfast too, I promise.

This is how I do it ⬆️
You can't see it, but there is yogurt underneath all that fruit and granola!
Here I'm using peaches and blackberries, but other great toppings are:
- Blueberries
- Raspberries
- Strawberries
- Banana
- Mango
- Nectarines
I've even put plums and cantaloupe on mine! So basically whatever floats your boat! (Or whatever you have on hand.)

We just got 60 lbs. of peaches so I'll be eating a lot of peaches this week on my breakfast as well as baking with them! 😳 Going to be making a lot of these ahhhmazing peach bars!!

Chocolate Lover's Granola {GF}
Ingredients
- ⅓ cup coconut oil melted
- ⅓ cup coconut sugar
- 3 tablespoons maple syrup
- 3 tablespoons cocoa powder
- 3 cups large flake oats
- 1 tablespoon chia seeds
Instructions
- Preheat the oven to 325ºF. Line a large baking sheet with parchment paper.
- In a large bowl, mix together coconut oil, coconut sugar, maple syrup, and cocoa. Add oats and chia seeds to the wet ingredients and mix until well coated.
- Spread out granola onto prepared baking sheet and bake for 35-45 minutes, stirring every 15 minutes. Do not let burn!
- Serve with milk or yogurt and fruit. Enjoy!
